The Manual - How to skin a rabbit

This week in The Manual we impart the age old wisdom that is, how to skin a rabbit. Look away now if scenes of animal butchery get the better of you.

1. If you are killing the rabbit yourself remove the gut immediately after you kill it or the meat will spoil.

2. When removing the guts take care not to puncture the guts or, again, the meat will spoil.

3. Now, with a meat cleaver chop off the legs head and tail.

4. Pull apart the skin from the meat by forcing your thumbs under the skin.

5. Once you have removed the skin from the hind legs, hold the hind legs in one hand and the flap of the skin in the other and in one hard continuous motion pull the whole thing off.

6. Break the pelvis and remove any remaining guts, then place the rabbit in salted water overnight to remove the blood from the meat.
