The great Mark Hix, Esquire’s own in-house chef, runs a tight ship at his signature restaurant on Brewer Street, Soho.
Bypass the lunching grandees, though, and head downstairs to Mark’s Bar for a glass or more of Hix Fix. It’s a potent, revivifying mixture, that’s also reassuringly simple – Morello cherries in Somerset eau de vie, crowned with champagne. As with martinis, one is all right, two is too many, and three is never enough.
What’s more, Hix has kindly made his marinated cherries available to buy – simply take home, add champagne, and relax.
