Papa Jules, the man behind London’s best-loved tiki bar Mahiki, has discovered an excellent reason (/cooked up a shameless excuse) to drink guilty pleasure cocktail, the Pina Colada. Apparently, the classic was invented on 16 August 1954, so is celebrating its birthday. Well, it would be rude not to join in. Here’s Papa's recipe. (Cocktail umbrellas and monkey swizzle sticks optional.)
Method: slip on your flip-flops and grab some cool glassware. Core a pineapple and put half of the flesh in a shaker. Add 50ml of Mahiki Gold Rum, 25ml of coconut cream, 25ml of coconut rum liqueur, 50ml of fresh pineapple juice and the juice from a half lime. Shake hard for 30 seconds. Strain and serve into the glass.
