Jason Scott, who runs Edinburgh's award-winning Bramble Bar with partner Mike Aikman adapted this recipe for a celery sour from the original recipe in Tom Bullock's classic 1917 tome, The Ideal Bartender. A good evening freshener.
Ingredients 50ml Martin Miller's Westbourne gin, 25ml fresh lemon juice, 12.5ml fresh pineapple juice, 12.5ml sugar syrup, 1 bar spoon Bitter Truth Celery Bitters, dash of egg white
Method Place all ingredients into shaker and “dry” shake. Then fill shaker with cubed ice and shake vigorously again. Double-strain into a coupe glass and garnish with a shaving of celery.
