This is my modern take on the '80s classic. The days of cocktail umbrellas and fluorescent drinks are long behind us – thankfully. But I still love this take on this classic flavour combination. I've used my father's own brand Liqueur di limoni which is an awesome drink, specially created using the finest lemons in the world. Bottoms up!
4 mint leaves
20ml lemon juice
10ml sugar syrup
10ml blue curucao
1. Mix the lemon juice, sugar syrup
2. Muddle shake and strain into a coupette
3. Garnish with the mint spring and a lemon twist. (Best served with no ice.)
