Gin and Bitters at The Rib Room

The reopened Rib Room at the Jumeirah Carlton Tower offers a superbly-stocked bar. The cocktails are great and the wine cellar is extensive - and the ultra-keen sommelier will be keen to talk you through the wine list (on an iPad, of course) - but the heart and soul of the drinks menu is the Gin & Bitters experience.

A hymn to the recipes of London’s classic cocktail bars, the Rib Room Bar offers an appealingly vast selection of gins, which can be matched up to a range of intensely flavoured bitters (these are provided by the acclaimed Bob’s Bitters, also served at the Connaught and the Dorchester). Dispensing bitters is a fine, alchemical art, and the Rib Room’s bartenders suggest a dose of either 13 or 14 drops to accompany your gin and tonic, or 10 for a Martini.

Cardamom bitters give a superbly heady, savoury edge to the drink, but might prove too overpowering for some – lavender is gentler, and adds a soft, perfumed depth. The tonic is Fever Tree, as it should be, and the selection of gins - fourteen in total, including lesser-spotted specimens such as Death’s Door, William Chase and Oxley - is pleasingly exotic.
