The 2017 edition of the Michelin Guide has been announced, detailing all the British restaurants that have earned or retained their one, two or three Michelin star status for the coming year.
This year's big winners were Veerswarmy in Mayfair, London's oldest Indian restaurant having been open since 1926, and The Ritz, with both establishments earning their first stars in the guide.
Elsewhere there was big news for Heston Blumenthal, who regained all three of his stars for his restaurant The Fat Duck, after temporarily moving his entire operation to Melbourne.
In total 17 new stars were awarded during a ceremony held in London last night, including 10 outside of the capital.
There are 120 Michelin inspectors covering 23 different countries, but the actual process behind awarding a restaurant a star is a closely guarded secret, with the only real details being the following:
One star = 'Very good cooking in its category.'
Two stars = 'Excellent cooking - worth a detour.'
Three stars = 'Exceptional cuisine - worthy of a special journey.'
As reported in The Telegraph, Rebecca Burr, editor of the UK guide since the 2011 edition, explained that one star is awarded for "food quality" and "consistency of offering."
The step from one to two stars "demonstrates the flair, creativity, consistency and quality of individual signature."
Three stars "represents extraordinary skill in displaying absolute mastery of classical through to modern cooking techniques and a philosophy of excellence."
