What’s the difference between tequila and mezcal?

The difference between the two seems subtle — tequila can only be made from blue agave, whereas mezcal can be distilled from any of the agave species that grow all over Mexico — but in practice, they're worlds apart.

The big difference being that a growing proportion of tequila is produced by drinks conglomerates in enormous factories, whereas the best mezcal is often more artisanal (think: clay pots, lava rocks and, occasionally, donkey-pulled grinding wheels).

Sound intense? Don't worry, this unique process is what gives mezcal its characteristic smokiness and botanical flavour, making it a versatile spirit for enjoying on its own as well as adding depth to cocktails.

How to drink mezcal

As we mentioned, mezcal has the potential to add intrigue to classic cocktails or be sipped straight. If you’re opting for the latter, then don’t confuse tequila and mezcal serves as one and the same.

Mezcal should always be served at room temperature to appreciate the nuanced aromatics, and in small sips (not slammed). A little water in between sips helps to cleanse the palate (and, you know, may heed any headaches the next morning... though don’t take our word for it).

How we test mezcal

We put 19 mezcals through two phases of rigorous testing by an expert panel. Each was sipped blind, then mixed with water to soften the alcohol and allow the underlying flavours to come through. They were seeking complex, well-balanced bottles that would go the distance on your bar cart.

Clase Azul topped our tequila taste test, so there were high expectations for its Durango mezcal – and it delivered. Wild Cenizo agave forms the base, taking up to 15 years to mature, and imparting a moreish, creamy quality unlike any other we tried.

Flavour-wise, there’s an impressive savoury-sweet balance, with notes of citrus, tropical fruit, campfire smoke and cloves at the fore. We’d savour straight up or serve alongside white fish ceviche topped with mango salsa.

And we’d be remiss not to mention the bottle, of course; deserving of prime position on your bar cart, this beauty is carved by Mazahuas artisans and finished with a colourful cap fashioned from beeswax, resin and beads. No mezcal collector should be without.

Crafted in collaboration with a five-generation mezcal family in Santiago Matatlán, Oaxaca, it’s an excellent entry-level drop for die hard tequila drinkers, thanks to the light smoke and aromatic agave notes. Building tropical fruit flavour makes this our go-to for mezcal margaritas.

It’s made using a combination of espadin and tobalá magueys, which are then roasted in an earthen oven, before the juice is extracted using a traditional donkey-pulled tahona. After copper-still distillation, it’s then rested in French oak barrels.
