Gerry Calabrese's Cocktail of the Week - Garden Spring Collins

Garden drinking. When the sun comes out there's nothing quite like it. And it's so much more socially acceptable than drinking in the park.

We asked drinks entrepreneur Gerry Calabrese (the man behind The Hoxton Pony in Shoreditch and Hoxton Gin) to create a drink for Esquire with just this pastime in mind.  

“The Tom Collins is one of my favourite classic cocktails,” says Calabrese. “Super refreshing with sharp citrus notes. It’s also brilliantly simple.” Cheers to that.

Garden Spring Collins

Ingredients

20ml Lemon Juice
20ml Elderflower
15ml Rhubarb Puree
10ml Suger
50ml Hoxton Gin

Method 

Combine ingredients in a cocktail shaker and shake.

2 Pour into a highball glass.

3 Top with soda.

4 Garnish with cubed ice, lemon wedge, mint spring and straw.

Now you just need to pipe out Will Smith's Summertime on a crappy portable speaker and head to the garden. Perfect.
