Time is of the Essence

It’s a common complaint among cocktail fans that they have to wait too long while a flamboyant, Tom Cruise-style bartender “throws” a drinks behind the bar, more performance than service. At The Aviary, Charles Joly reckons that three to seven minutes is the ideal waiting time per drink. “I’m on a clock,” he says.
