How do you actually rate how good a restaurant is?
Among the professional moaners on TripAdvisor, the slightly out-of-reach Michelin guides and that over-eager recommendation from a friend whose cooking once gave you food poisoning, it can be a tough one to know where to wine and dine.
A new edition of the biblically sized book Where Chefs Eat has been released and includes restaurants across the world approved and recommended by top chefs. We're talking Michelin-starred, owns a chain of restaurants, regularly appears on Great British Menu top chefs.
Here's a pick of the UK eateries that made the cut.
Coombeshead Farm, Lewannick, Cornwall
What the chef said: "Tom Adams and April Bloomfield have opened this farm, with rooms and a super restaurant. Unique with all the hospitality one would expect," - Nathan Outlaw.
Also recommended by: Alex Jackson, Isaac McHale, Dave Pynt and Tim Spedding.
The Seahorse, Dartmouth, Devon
What the chef said: "Fantastically cooked fish over coals, on the bone or off the bone but always perfectly cooked, with a view of the sea and great wines," - Neil Borthwick.
Also recommended by: Martin Morales and Henry Harris.
The Sportsman, Whistable, Kent
What the chef said: "Whitstable is a great day trip from London. Chuck in some technically really impressive cooking with brilliant ingredients in an unpretentious atmosphere and you've got all the boxes ticked for any special occasion," Mark Dobbie.
Also recommended by: Isaac McHale, Andy Oliver and Luke Vandore-Mackay.
Marksman Public House, Hackney, London
What the chef said: "The menu exemplifies modern British cooking at its finest, while also maintaining the charm of an old pub. Their rotating selection of pies is not to be missed, from oxtail to chicken and wild garlic, they are always masterfully crafted," - Mark Rosati.
Also recommended by: Harneet Baweja, Henry Harris, Miles Kirby, Thomasina Miers and Tim Spedding.
Purnell's, Birmingham
What the chef said: "I had the best meal of my life there," Gareth Ward.
Lyle's, Shoreditch, London
What the chef said: "I think the cooking here is one of the best anywhere in the world. James Lowe takes really amazing local produce in season, treats it carefully and simply, and what you end up with is a contemporary, sensibly creative cuisine. I think this place is flying the flag for the future of British cooking," - Jowett Yu.
Also recommended by: Timur Abuzyarov, Matteo Aloe, Ollie T. Cellton, Carl Clarke, Mark Dobbie, Elizabeth Haigh, Tom Harris, John Jackson, Eyal Jagermann, Jeremy Lee, Isaac McHale and Shuko Oda.
The Walnut Tree, Monmouthshire, Wales
What the chef said: "It's just a lovely place to go out of the way for (if you don't live in Wales). The food is Michelin-quality but the setting is informal and welcoming. The surrounding grounds and cottages also make the whole adventure one worth stretching out," Yotam Ottolenghi.
Hoppers, Soho, London
What the chef said: "These are big, bold, thick curries packed with fat and huge flavour profiles, from bone marrow to chicken hearts. You can't eat much more than they give you and you usually over order. Almost everything is done perfectly and all the attention to detail for such great-value food is stunning. I'd go there every day if I trusted myself more. Cracking roti parathas too," - Neil Rankin.
Also recommended by: Nieves Barragan Mohacho, Erchen Chang, Pete Denhart, James Knappett, Thomasina Miers, Jose Pizarro, Shaun Searley, Tam Storrar and Sameer Taneja.
Smokestak, Shoreditch, London
What the chef said: "The food is really tasty, the meat is well smoked and you can tell they thought hard about putting the menu together," Tom Sellers.
Also recommended by: Pete Denhart.
Le Manoir Aux Quat'Saisons, Oxford
What the chef said: "Great food from a fantastic, machine of a kitchen operation. Beautiful building and surrounds make for an individual and considered dining experience," - Christian Edwardson.
Also recommended by: Mark Jarvis, Bruno Loubet, Cameron Mathews and Tam Storrar.
The River Cafe, Hammersmith, London
What the chef said: "It serves the finest ingredients cooked with complete understanding and in so doing they deliver food that is simply wonderful to eat. It is also host to the finest front of house team in London," Philip Howard.
Also recommended by: Adam Byatt, Ollie T. Cellto, Samantha and Samuel Clark, Alexis Gauthier, Alex Jackson, Eyal Jagermann, James Lowe, Colin Mackay, Allegra McEvedy, Jon Rotheram and Bevan Smith.
Padella, Borough, London

Also recommended by: Philip Howard, Bruno Loubet and James Lowe.
The Old Inn, Exeter, Devon

The Ledbury, Notting Hill, London
What the chef said: "Give up on the rest of the day from lunchtime on because you won't leave within five hours and you won't want to. Stunning food, lots of courses, but unlike some high-end spots, you actually remember them. Attention to detail, service and timing are faultless," - Tania Steytler.
Also recommended by: Sat Bains, Galton Blackiston, Neil Borthwick, Will Bowlby, Phil Carmichael, Sandia Chang, Marc Djozlika, Gary Foulkes, Joshua Katzm Makcolm Lee, Ben Murphy, Yotam Ottolenghi, Michael Reid and Isaac McHale,
